Easy Chicken Pasta Salad

RECIPE OF THE MONTH

INGREDIENTS

  • 3 cups cooked pasta (rotini works best)
  • 2 cups cooked chicken, chopped
  • 1 cup halved cherry tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely diced
  • 1/2 cup shredded parmesan

DRESSING

  • 1/2 cup mayo
  • 2 tbsp sour cream or Greek yogurt
  • 1 tbsp Italian dressing
  • Salt & pepper
  • Optional: squeeze of lemon

DIRECTIONS

  1. Cook pasta, rinse with cold water, and drain well.
  2. Mix pasta, chicken, tomatoes, cucumber, onion, and parmesan.
  3. Stir together dressing ingredients.
  4. Toss everything together and chill for 20–30 minutes.

Make It Extra Good

  • Add crispy bacon bits
  • Use rotisserie chicken
  • Sprinkle extra parmesan and black pepper on top before serving

It’s creamy, fresh, and great cold for lunches or cookouts.
