
RECIPE OF THE MONTH
INGREDIENTS
- 3 cups cooked pasta (rotini works best)
- 2 cups cooked chicken, chopped
- 1 cup halved cherry tomatoes
- 1/2 cup diced cucumber
- 1/4 cup red onion, finely diced
- 1/2 cup shredded parmesan
DRESSING
- 1/2 cup mayo
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp Italian dressing
- Salt & pepper
- Optional: squeeze of lemon
DIRECTIONS
- Cook pasta, rinse with cold water, and drain well.
- Mix pasta, chicken, tomatoes, cucumber, onion, and parmesan.
- Stir together dressing ingredients.
- Toss everything together and chill for 20–30 minutes.
Make It Extra Good
- Add crispy bacon bits
- Use rotisserie chicken
- Sprinkle extra parmesan and black pepper on top before serving
It’s creamy, fresh, and great cold for lunches or cookouts.
